Spaghetti Carbonara

  • Spaghetti
  • A few shallots or a small onion
  • 2 cloves of garlic
  • Vegan cream
  • 1 tbsp nutritional yeast
  • White wine
  • Koko Cheddar Cheese Alternative
  • Parsley (to garnish)
  • 5 mushrooms
  • Vegan bacon
  • 1 tsp maple syrup
  • 1 tsp liquid smoke
  • 1/2 tsp sweet smoked paprika


  1. 1. Chop the onions, garlic, mushrooms and bacon.
  2. 2. Add some oil to one pan, fry the onion and add some salt.
  3. 3. Put your spaghetti on.
  4. 4. Once the onion is translucent add the garlic and continue to fry on a low heat.
  5. 5. In a separate pan, fry the mushrooms in a little oil.
  6. 6. Pour in some white wine to deglaze the onion pan and add in about 1 tbsp nutritional yeast and some vegan cream, let this simmer and season with salt and pepper.
  7. 7. Once the mushrooms are starting to brown, add a little smoked paprika and about 1 tsp liquid smoke and 1 tsp maple syrup and let it cook on a low heat.
  8. 8. Once the spaghetti is cooked, add some of the pasta water to the onion pan and drain the rest.
  9. 9. Add your vegan bacon to the mushroom pan and cook until crispy.
  10. 10. Mix the bacon mixture into the creamy sauce and add the spaghetti then top with grated vegan cheese and chopped parsley if you have it!
