Cheesy Stuffed Mushrooms
- 2 large flat mushrooms
- Tsp oil
- 1/2 onion
- 50g courgette
- 50g mixed peppers
- 2 tsp homemade breadcrumbs
- 20g Koko Cheddar Cheese Alternative

- Fry the mushrooms in oil until softened and browned.
- Remove from the pan.
- Add the onion, courgette, and peppers to the pan and fry for 5 minutes.
- Fill the mushrooms with the onion, courgette, and peppers.
- Top with breadcrumbs and cheese and grill until the cheese melts.
