Mexican Inspired Microwave Sweet Potato

Ingredients

  • 1 can (15 ounces) black beans
  • 1 cup green pepper diced
  • ½ cup sweetcorn
  • ¼ cup red onion chopped
  • 1 avocado diced
  • 1 handful coriander chopped
  • 2 limes (juice)
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon agave syrup (optional)
  • 1 teaspoon garlic + ginger grated (optional)
  • 1 teaspoon salt
  • 2 dollops Koko Greek Yogrt!
  • 2 tablespoons chopped jalapeños (optional)

Method

  1. Scrub 2 medium-sized sweet potatoes with a brush under cold water. Dry them and prick them with a fork several times.
  2. Microwave one at a time at max power for 5 to 8 minutes. Carefully slide a knife in the center of the potato to check it’s cooked.
  3. Add the black beans (drained), pepper, sweetcorn, red onion, and avocado to a bowl.
  4. Season with coriander, lime juice, olive oil, agave syrup, garlic + ginger, and salt.
  5. Stuff the sweet potato with the salad, top with Greek Yogrt! and jalapeños.
