Creamy Roasted Tomato Pasta Sauce
Ingredients
- Tomatoes – 6 (ish), halved
- Garlic – half a bulb, bruise each clove
- 1 medium brown onion - quartered
- ½ cup Koko Greek Yogrt!
- Olive oil
- Balsamic vinegar
- Salt and pepper
- Basil
- Oregano
Method
- Place your halved tomatoes in a roasting tin. Add your garlic cloves and onion.
- Season generously with salt and pepper; drizzle olive oil and balsamic vinegar. Use a spoon to ensure all ingredients are well coated.
- Roast in the oven for 45 minutes at 180°C fan/200°C.
- Carefully transfer to a large bowl. Add plenty of basil and oregano.
- Blend until smooth – we used a hand blender but a food processor would be less messy!
- Stir in the Koko Greek Yogrt!
- Serve with cooked pasta and enjoy!
