Creamy Roasted Tomato Pasta Sauce

Ingredients

  • Tomatoes – 6 (ish), halved
  • Garlic – half a bulb, bruise each clove
  • 1 medium brown onion - quartered
  • ½ cup Koko Greek Yogrt!
  • Olive oil
  • Balsamic vinegar
  • Salt and pepper
  • Basil
  • Oregano

Method

  1. Place your halved tomatoes in a roasting tin. Add your garlic cloves and onion.
  2. Season generously with salt and pepper; drizzle olive oil and balsamic vinegar. Use a spoon to ensure all ingredients are well coated.
  3. Roast in the oven for 45 minutes at 180°C fan/200°C.
  4. Carefully transfer to a large bowl. Add plenty of basil and oregano.
  5. Blend until smooth – we used a hand blender but a food processor would be less messy!
  6. Stir in the Koko Greek Yogrt!
  7. Serve with cooked pasta and enjoy!
