Colourful Baby Potato Salad

Ingredients

Salad

  • 500g baby potatoes
  • 1 red pepper
  • A handful of sunflower seeds
  • 1 spring onion
  • Fresh thyme
  • Olive oil
  • Salt
  • Pepper
  • 1 tsp Koko Spread

Method

  1. Wash then bake the baby potatoes.
  2. Cut them in half and add chopped red peppers and spring onions.
  3. Add the sunflower seeds.
  4. Add the fresh thyme and olive oil and Koko Spread.
  5. I am dairy and grain intolerant and prefer a savory breakfast, so potato is my go-to veg for most breakfasts :)
