- 500g baby potatoes
- 1 red pepper
- A handful of sunflower seeds
- 1 spring onion
- Fresh thyme
- Olive oil
- 1 tsp Koko Spread
- Wash then bake the baby potatoes.
- Cut them in half and add chopped red peppers and spring onions.
- Add the sunflower seeds.
- Add the fresh thyme and olive oil and Koko Spread.
- I am dairy and grain intolerant and prefer a savory breakfast, so potato is my go-to veg for most breakfasts :)
