Blueberry Lemon Pancakes

  • 1 cup buckwheat flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1 cup Koko Original Milk
  • 1 tsp vanilla extract
  • 2 bananas, mashed
  • Juice of half of a lemon
  • 2 handfuls of blueberries
  • Coconut oil, for cooking

  1. Mix all of the dry ingredients in a big bowl and then, add the wet ingredients to it. Stir until everything is well combined and the mixture is thick(not runny). At this step, add the frozen blueberries. On a medium-high heat, on a cooking pan, add a bit of coconut oil and let it melt while the pan is heating. With a tablespoon, form little circle-size pancakes and cook them for about 3 minutes on each side. Makes 12 pancakes 🖤
