Mood Boosting Waffles
Ingredients
Waffles
- 150g wholemeal flour
- 1 tsp baking powder
- 2 tbsp brown sugar
- 2 tbsp milled flaxseed
- 240g Koko Original
- 15g raw cocoa powder
- (Extra brown sugar and flaxseed to sprinkle on after)
Matcha Yoghurt
- 200g Koko Plain Yogurt Alternative
- 3g matcha
- 10g chia
- 1 tsp vanilla seeds or essence
- ½ lime juice
Fruit
- 100g water
- 50g raspberry jam
- 30g brown sugar
- 80g blueberries
- 80g blackberries
- 80g raspberries
- 20g goji berries
- 1 star anise
Garnish
- 10g mint
- 10g raw cocoa nibs
- 2 brazil nuts
- Sprinkle of brown sugar
- Sprinkle of flaxseed

Method
- Mix all the yoghurt ingredients together and set aside in the fridge for 30 minutes or until it thickens.
- Place water, jam, brown sugar and goji berries in a pan and bring to the boil for 1 minute then pour onto the blueberries, blackberries and raspberries. Set to one side to cool.
- Pre-heat waffle iron.
- Place all waffle mix in a food processor and blend for 3 minutes then place in oiled waffle iron for 5 minutes or until crispy.
- Plate up the waffles, and sprinkle with sugar and flaxseed. Pour over fruit mixture, spoon on the matcha yoghurt and garnish with the chopped brazil nuts, mint and cocoa nibs.
