Jumbo Oats & Chia Seeds with Banana & Pomegranate Pearls

Ingredients

  • 2 tbls of jumbo oats
  • 1 tbls of chia seeds
  • Koko Original Milk
  • Half a banana
  • Full fat Greek yoghurt
  • 2 tbls frozen pomegranate seeds
  • 2 tsps mixed sunflower & pumpkin seeds
  • 1 tsp flaked almonds

Method

  1. Soak jumbo oats & chia seeds in Koko coconut milk (enough to cover) for approx 10 minutes
  2. Microwave for one minute
  3. Slice half a banana & place on warmed oats & chia
  4. Microwave 30 seconds
  5. Microwave pomegranate seeds for 30 seconds separately to soften
  6. Add 2 tbls of thick full fat Greek yoghurt onto sliced banana
  7. Pour over softened pomegranate seeds together with any juice
  8. Sprinkle mixed pumpkin & sunflower seeds & the flaked almonds across the top
  9. Eat & enjoy this colourful bowl of deliciousness
