Gluten & Dairy Free Banana Pancakes
Ingredients
- 75g Koko Spread (melted, 30 seconds in microwave)
- 1 large free range egg
- 350ml Koko Original Milk
- 1tsp vanilla essence
- a pinch of salt
- 3tbsp caster sugar
- 230g gluten free self raising white flour
- 3 bananas (mashed)
- extra Koko Spread for frying

Method
- In a large bowl whisk together the dairy free butter, egg, Koko original milk, vanilla essence, salt, sugar and mashed banana. Add gluten free self raising flour and whisk until combined.
- Heat 1tsp of dairy free butter in a large frying pan over medium heat. Cook 3 pancakes at a time. Cook until golden brown on each side. Add more butter as needed.
- Serve with maple syrup/Koko yogurt and fruits. This recipe makes 20 banana pancakes in less than 30 minutes.
