Gluten & Dairy Free Banana Pancakes

Ingredients

  • 75g Koko Spread (melted, 30 seconds in microwave)
  • 1 large free range egg
  • 350ml Koko Original Milk
  • 1tsp vanilla essence
  • a pinch of salt
  • 3tbsp caster sugar
  • 230g gluten free self raising white flour
  • 3 bananas (mashed)
  • extra Koko Spread for frying

Method

  1. In a large bowl whisk together the dairy free butter, egg, Koko original milk, vanilla essence, salt, sugar and mashed banana. Add gluten free self raising flour and whisk until combined.
  2. Heat 1tsp of dairy free butter in a large frying pan over medium heat. Cook 3 pancakes at a time. Cook until golden brown on each side. Add more butter as needed.
  3. Serve with maple syrup/Koko yogurt and fruits. This recipe makes 20 banana pancakes in less than 30 minutes.
