Carrot Cake Overnight Oats

Ingredients

For Batter Base

  • Grated Carrots
  • Raisins
  • Ground Cinnamon
  • Ground Nutmeg
  • Ground Ginger
  • All Spice
  • Oats
  • Chia seeds
  • Hemp seeds
  • Chopped Pecans
  • Koko Original Milk

For Topping

  • Koko Greek Style Yogurt
  • Chopped Caramelised Pecans
  • Coconut Chips
  • Carrots
  • Ground Cinnamon
  • Icing Sugar
  • Maple Syrup

Method

  1. Put In bowl 1/2 cup grated carrots, handful of raisins, 1 cup oats, 2 tbsp hemp seeds, 2 tbsp chia seeds, 1 tsp ground Cinnamon, 1tsp ground Ginger, 1 tsp ground all spice, 1 tsp ground nutmeg, chopped pecans and then add 1 and a half cup of koko coconut milk
  2. Mix batter and put in pots overnight
  3. For topping mix 1/2 pot of koko Greek style yogurt with 1/2 cup icing sugar, with coconut chips mix it together and add to top of batter on pots
  4. Finish off with grated carrots, chopped caramelised pecans, ground cinnamon and maple syrup
