Super mushroom cauliflower risotto
Ingredients
- 2-3 cups riced cauliflower
- 1 diced small sweet onion
- 3 cloves minced garlic
- 1 cup sliced cremini or brown button mushrooms
- 1 sliced portobello mushroom
- 1 tbsp nutritional yeast
- 1/4 cup Koko Original Like Milk
- 3/4 cups water
- 1 tbsp naturya mushroom superfood blend
- 1/4 vegetable stock cube
- Juice of 1/4 lemon
- Fresh parsley
Method
- Comfort food (we all need a little TLC rn!), but getting all the veggies in ????. This one turned out great, so creamy and flavorful. The cauliflower is a great way to lighten this up, but you can definitely use regular risotto or white rice here as well. ~ In a sauce pan sauté 1 diced small sweet onion in 1 tbsp olive oil & salt & pepper for 5 mins on low. Add 3 cloves minced garlic and cook another 3 mins. Add 1 cup sliced cremini mushrooms and 1 sliced portobello. Stir and sauté 5 minutes. Remove portobellos. ~ Add the following and cook on med/low heat for 20 mins: 1 tbsp nutritional yeast 1/4 cup coconut milk 3/4 cups water 1 tbsp naturya mushroom superfood blend 1/4 vegetable stock cube Juice of 1/4 lemon 2-3 cups #cauliflowerrice ~ Quick sauté portobellos and place on risotto with cracked pepper and fresh parsley ????
