Simple Salad

Ingredients

  • 5 large leaves of romaine lettuce, shredded
  • 8-10 cherry tomatoes, halved
  • 3 tbsp tinned sweetcorn, drained
  • 2 spring onions, finely sliced
  • 1/3 cucumber, deserted and cubed
  • 40g Koko Cheddar Cheese Alternative, cubed
  • Dressing of choice (I used shop bought vegan Caesar)
  • 2x tortilla wraps (optional)

Method

  1. Combine all ingredients except cheese and dressing in a bowl and toss to combine
  2. Transfer to plate and scatter with cheese cubes
  3. Drizzle with dressing as desired
  4. Enjoy! Eaten as is or in wraps for a more filling meal
