Dairy Free Ice Cream




You will need:-

  • 1 tsp vanilla extract
  • 1 vanilla pod
  • 400ml Koko Dairy Free milk
  • 1 heaped tsp of cornflour
  • 70g sugar
  • 3 egg yolks

To make:-

1.       Combine the sugar, cornflour and egg in a glass bowl

2.       Add the milk to a saucepan with the vanilla and heat until just boiling

3.       Pour over the eggs and stir to combine

4.       Return to heat and allow to thicken

5.       Remove from heat and allow to cool

6.       Once cool, add to a plastic tub suitable for the freezer

7.       Beat up the ice crystals every 30 minutes for 2 hours

8.       After 2 hours the ice cream should be ready

Try with a home made fresh strawberry sauce
