Ingredients

One sweet potato

X4 large flat mushrooms

One red onion

One pepper

One tin of black beans

A couple of handfuls of spinach

Salt, pepper

Fajita mix

Olive oil

Home made guacamole

Salsa

Method

1. Chop the sweet potato into wedges. Roast plain in a pre heated oven of 180 degrees fan for 15 minutes. On a large baking tray with lined with baking parchment. In the mean time, chop the rest of the vegetables, toss in olive oil, fajita mix, black beans salt and pepper. Add this to the sweet potatoes, mixing them with the seasoning and olive oil. Roast for 20 minutes. Add the spinach and roast for another 2 minutes. Grate some koko deliciously mellow dairy free alternative. Serve with wraps, salsa, the grated koko and home made guacamole.
