Simple Salad

Ingredients

5 large leaves of romaine lettuce, shredded

8-10 cherry tomatoes, halved

3 tbsp tinned sweetcorn, drained

2 spring onions, finely sliced

1/3 cucumber, deserted and cubed

40g Koko Cheddar Cheese Alternative, cubed

Dressing of choice (I used shop bought vegan Caesar)

2x tortilla wraps (optional)

Method

1. Combine all ingredients except cheese and dressing in a bowl and toss to combine
2. Transfer to plate and scatter with cheese cubes
3. Drizzle with dressing as desired
4. Enjoy! Eaten as is or in wraps for a more filling meal
