Mother’s Day Berry Crumble Baked Oats

Ingredients

120g rolled oats

2 tbsp chia seeds or ground flax

1 tsp baking powder

Pinch of salt

300ml Koko Original or Unsweetened

3 tbsp maple syrup or other liquid sweetener

1 tsp vanilla extract

Optional: 1 ripe banana, mashed (for extra sweetness + softness)

200g frozen mixed berries

1 tbsp maple syrup

1 tsp cornflour (helps thicken the juices)

40g rolled oats

20g chopped nuts or seeds (optional)

1 tbsp coconut oil or vegan spread, melted

1 tbsp brown sugar or coconut sugar

Method

1. Prep the dish - Preheat oven to 180°C (fan). Lightly oil or line a small baking dish.
2. Berry base - In the dish, mix frozen berries, maple syrup and cornflour.
3. Spread into an even layer.
4. Baked oat mixture - In a bowl, stir together oats, chia/flax, baking powder and salt.
5. Add Koko, maple, vanilla (and mashed banana if using). Mix, then pour over the berries.
6. Crumble topping - In a small bowl, combine oats, nuts/seeds, melted coconut oil and sugar.
7. Sprinkle over the top.
8. Bake - Bake for 25–30 minutes until the top is golden and the berries are bubbling up at the sides.
9. Serve - Scoop into bowls and top with a big spoon of cold Koko Yogurt! and extra berries. Perfect “breakfast in bed” moment.
