Eton Mess Mocktail Recipe

Ingredients:

  • 100ml Raspberry coulis
  • 1 Lime – zest and juice
  • 80g Ice
  • 100ml Koko Plain Yogrt!
  • 100ml Koko Kids Milk
  • 50g Fresh and 10g freeze-dried raspberries
  • 20g Fruit syrup
  • 40g Crushed vegan meringue

 

 

 

Method:

  1. In a blender add half the raspberry coulis, fresh raspberries, Yogrt! and zest. Blitz.
  2. In a cocktail shaker add the milk, ice, remaining coulis and lime juice and shake well.
  3. To serve, dip the rim of the glass in syrup and then dip in freeze dried raspberries.
  4. Pour from the cocktail shaker and then add a layer from the blender.
  5. Sprinkle the dried raspberry and crushed meringue on top
